The recipe for Bolognese pasta was created in the Italian province of Bologna. This is where the name of the world-famous sauce came from. Bologna is the culinary capital of Italy. In the country of "pizza and pasta", Bolognese is called Al Ragu, which translates as "ragu". In Italy, "Al Ragu" is a general term used to refer to all types of meat sauces that are cooked for several hours. Preparation of Bolognese pasta can take from two hours. Italians say that bolognese sauce goes well with pasta that is wider, flat in shape.

Italian cuisine is quite original, diverse, and the dishes of this country are known far beyond its borders. Italian pasta with sauce gained popularity during the period of severe poverty and decline of the country. People who have been used to luxurious banquets and celebrations since ancient times found themselves in a difficult situation. From the very beginning, pasta with Bolognese sauce was prepared like a stew. The combination of meat, vegetables and pasta made it possible to quickly satisfy hunger. The first mention of ragu sauce dates back to the end of the eighteenth century. The recipe of that time had some differences from the modern version — it did not contain only veal. The author of this "delicious masterpiece" in Italian, Pellegrino Artusi, suggested adding truffles, chicken liver and cream to the dish.

A classic recipe for Bolognese pasta, it is not only beef, but also pancetta. This is a fatty pork breast, dried in spices and seasonings. Tagliatelle was the first type of pasta to serve Bolognese. Italian dishes have won the hearts of people all over the world. It's no wonder why so many foodies want to master her recipes.

How to cook Bolognese pasta at home

You can prepare an Italian dish from products available to everyone.

Main ingredients:

  • 1 tablespoon of olive oil;

  • 4 pieces of smoked bacon;

  • 2 medium bulbs;

  • 2 carrots;

  • 2 sticks of celery;

  • 2 cloves of garlic;

  • 2-3 sprigs of rosemary leaves;

  • 500 g of minced beef;

  • 75 g of grated parmesan, plus; extra for serving;

  • 400 g of spaghetti.

A simple recipe for Bolognese pasta and sauce ingredients:

  • 2 cans of tomatoes in their own juice, 400 g each;

  • A bunch of basil is small;

  • 1 teaspoon of dried oregano;

  • 2 fresh bay leaves;

  • 2 tablespoons of tomato puree;

  • 1 beef bouillon cube;

  • 1 red chili pepper, pitted and finely chopped (optional);

  • 125 ml of red wine;

  • 6 cherry tomatoes, cut in half.

How to make bolognese pasta quickly and deliciously.

Place a large skillet over medium heat and add 1 tablespoon olive oil.

Add 4 small pieces of bacon and fry for 10 minutes until golden and crispy.

Reduce the heat and add 2 onions, 2 carrots, 2 sticks of celery, 2 cloves of garlic and the leaves of 2-3 sprigs of rosemary, all finely chopped, then fry for 10 minutes. Stir the vegetable often until it softens.

Increase the heat to medium, add 500 g of ground beef and cook, stirring, for 3-4 minutes, until the meat is browned.

Add 2 cans tomatoes, finely chopped leaves ¾ small bunch basil, 1 teaspoon dried oregano, 2 bay leaves, 2 tablespoons tomato puree, 1 beef stock cube, 1 seeded and finely chopped red chili pepper (if using), 125 ml of red wine and 6 cherry tomatoes cut in half. Stir with a wooden spoon while chopping the tomatoes.

Bring to a boil, reduce heat and cover. Cook for 1 hour and 15 minutes, stirring occasionally, until you have a rich, thick sauce.

Add 75g of grated parmesan, check the seasoning and mix.

When the bolognese is almost ready, cook the spaghetti.

Drain the spaghetti and either toss with the bolognese sauce or serve the sauce on top.

Serve with grated Parmesan, remaining basil leaves and crusty bread, if desired.

Bolognese is remarkable for its truly amazing versatility, precisely thanks to these qualities it has won hearts and stomachs all over the world. Italian sauce can be used not only with pasta, but also as a ready-made filling for lasagna or pizza.

But also, you should not forget that it can easily be used as a regular sauce for any side dishes. Italians, for example, on the days of large family feasts, pour polenta (corn porridge) with a universal meat sauce. You can add it to mashed potatoes, and even with buckwheat it will be very tasty.
